 How to cook Chocolate cake and caramelized pistachios


Ingredients : 

100 g dark chocolate 70% cocoa
200 g of milk chocolate
60 g of flour + 15 g in the mold
100 g + 15 g of butter for the mold
175 g of sugar
4 whole eggs + 1 white
120 g of fresh pistachios
1 pinch of salt

Method: 

Preheat oven to 180 ° C (gas mark 6).
Melt the dark chocolate and 60 g butter. Let cool and mix with
egg yolks.
Beat the egg whites, incorporating a pinch of salt and 75 g sugar.
Mix one third of whites with dark chocolate. Add the sifted flour,
then the rest white.
Pour this mixture into buttered and floured mold 1. Bake.
Let cool.
Bring to boil, the remaining sugar, 2 large spoons of water. Add
crushed pistachios. Stir constantly until the mixture caramelize.
Spread on one plate and let cool.
Melt the milk chocolate and 40 g butter. Spread on cooled cake
and add the crushed caramel.
Allow to harden before passing under the broiler time that chocolate

based.
