how to cook chicken with artichoke hearts



Serves 4
Hands-on time: 5 to 10 minutes
Cooking time: 30 to 35 minutes

ingredients : 

4 Chicken Breasts (halves) Sous Vide (page 16), sliced
1 to 2 tablespoons (15 to 30 ml) olive oil
1 jar (8.5 oz/241 g) sun-dried tomatoes, in oil, minced
1 clove garlic, peeled and minced
1 can (14 oz/400 g) artichoke hearts, quartered
1 package (7 oz/198 g) baby spinach

direction : 

In a skillet, add the olive oil and heat to medium.  Sauté the garlic in the oil until it’s fragrant.
 Add the sun-dried tomatoes, including their oil, and simmer for about 15 minutes.  Add the
artichokes and simmer for another 10 minutes.
Just before serving, add the baby spinach to the pan and toss until it’s slightly wilted.
Put a portion of the mixture onto each plate, along with the sliced chicken breasts.
