how to cook chicken with artichoke hearts
Serves 4
Hands-on time: 5 to 10 minutes
Cooking time: 30 to 35 minutes
ingredients :
4 Chicken Breasts (halves) Sous Vide (page 16), sliced
1 to 2 tablespoons (15 to 30 ml) olive oil
1 jar (8.5 oz/241 g) sun-dried tomatoes, in oil, minced
1 clove garlic, peeled and minced
1 can (14 oz/400 g) artichoke hearts, quartered
1 package (7 oz/198 g) baby spinach
direction :
In a skillet, add the olive oil and heat to medium. Sauté the garlic in the oil until it’s fragrant.
Add the sun-dried tomatoes, including their oil, and simmer for about 15 minutes. Add the
artichokes and simmer for another 10 minutes.
Just before serving, add the baby spinach to the pan and toss until it’s slightly wilted.
Put a portion of the mixture onto each plate, along with the sliced chicken breasts.
