ingredients : 

4 Salmon Fillets Sous Vide (page 44)
1 pint (300 g) cherry or grape tomatoes, halved
1 cucumber, diced
2 ounces (60 g) pitted Kalamata olives
12 to 15 fresh mint leaves
2 tablespoons (30 ml) olive oil
1 lemon, for juice

direction : 

coarse salt and ground pepper
mixed greens for serving
4 ounces (113 g) feta cheese, coarsely crumbled
Combine the tomatoes, cucumber, olives, mint, and olive oil in a bowl.  Squeeze the lemon
over the top, season with salt and pepper to taste, and toss.
Arrange the mixed greens on a serving plate and top with the salmon.  Spoon the tomato
mixture over the fi sh and sprinkle with the feta.
Serve accompanied by a dry white wine or black tea over ice.
